Eating more eggs may benefit vision in older adults.
Studies have shown that lutein and zeaxanthin may reduce the risk of dry, age-related macular degeneration (the leading contributor of blindness) because of their photo-oxidative role as macular pigment. These compounds are commonly found in green leafy vegetables. Supplements and food containing lutein helps increase blood levels of lutein.
Just recently, scientists have found that consuming 2-4 eggs yolks per day helps increase blood levels of lutein and zeaxanthin. Specifically, the study showed that consumption of 4 egg yolks per day, and possibly of 2 egg yolks per day, for 5 weeks benefited macular health in older adults with low macular pigment density. Serum HDL cholesterol (good cholesterol) increased without an increase in LDL cholesterol in this study population, most of whom were taking cholesterol-lowering statins.
